If I use those big Mustad 16/0 j hooks for rigging stingrays should I use double strands of #19 wire or just one strand

A lot of guys do fine with a single strand but some guys looking for 14ft monsters use double. Double is definitely going to get hit less in my opinion as it has a larger signature in the water.
