FAMOUS Jetty Park Fish Taco Recipe! SO GOOD!!!

Back in September, 2013 I took a week off to camp and fish Canaveral National Seashore over at Jetty Park campground/pier. It was the mullet run and the blacktip fishing was INSANE! I made friends with the lady at the bait shop there and she said I have to eat the fish taco at the snack stand.

SHE WAS NOT KIDDING AROUND! THIS WAS THE BEST FISH TACO I'VE EVER EATEN!!! It may have had something to do with being drunk, but I didn't care. It was so good I ordered another one. It took some prying (and a 6 pack), but I got the recipe out of the person behind the counter. I share it with you all today, so eat up!!!

JETTY PARK BLACKENED FISH TACO
makes 1 taco

1 soft 6 or 8 inch tortilla
1 hard taco shell
1 tilapia fillet
generic cajun seasoning
frying oil
shredded lettuce
black bean salsa
shredded cheddar cheese
Paprika Sauce: recipe below

Heat up a fry pan and toast the soft tortilla on both sides and lay it on a plate. Microwave the taco shell for 15 seconds, crack it into two pieces down the middle and lay it on the tortilla. Heat a tablespoon of oil in the fry pan over medium high heat. Season the tilapia with the cajun seasoning and saute it for 3 to 4 minutes each side. Lay it on the taco shell. Then cover with shredded lettuce, black bean salsa, cheese and paprika sauce.

Paprika Sauce:
1/2 cup mayonnaise
1/2 cup ranch dressing
1 teaspoon paprika
1 tablespoon generic cajun seasoning

Mix it all together and put it in a squeeze bottle. I guarantee you will use it on everything.
